Mallorca, one of the Mediterranean's most picturesque islands, is celebrated for its rich cultural heritage and varied gastronomy. With an abundance of freshly caught seafood and locally sourced vegetables at his fingertips, our Executive Chef Javier López combines traditional Majorcan recipes with avant-garde techniques, celebrating the island’s ancient culinary roots while embracing contemporary ideas.
Hailing from Barcelona, Spain, Chef Javier grew up immersed in the scents and flavours of his family's culinary business. After completing a culinary arts degree in Barcelona, Javier soon began honing his skills alongside renowned chefs in Michelin Star Restaurants, including Het Vijfde Seizoen in Belgium, where he worked under Chef Geert Jan Raven, and Fira de Barcelona, where he acted as sous-chef to the legendary Chef Carles Gaig.
Having also worked in Thailand and Latvia, Javier’s culinary philosophy is centred around a farm-to-table approach, with a focus on high-quality and locally sourced fresh vegetables and ingredients. He is an advocate for sustainability and environmental protection, and practises minimum-waste values, adopting a harmonious, sensitive approach to his environment and cultural surroundings.
Taking great pride in his commitment to supporting Majorcan growers and producers while delivering an unforgettable dining experience for you and your loved ones to enjoy, his team has collaborated with Jaume Rosselló, a local Majorcan farmer from Inca who carefully nurtures local truffles, extremely rich in flavour, which we use in our signature dishes. Chef Javier López’s delectable Wagyu dish is infused with these tantalising truffles, bringing a taste of the island's unique flavours to your plate.

Named after the Sóller coastline’s renowned red fish, known as Scorpion fish, the restaurant is perched on the impressive clifftop of Port de Sóller, backdropped by spectacular views of the Tramuntana Mountains, serene Port, and shimmering sea. Here, you’ll discover a fine selection of local fish and seafood delicacies prepared by Chef Javier.
